Chocolate Chunk Chickpea Blondies

If you haven't yet tried baking with chickpeas, you've got to try this recipe! These legumes create a dense, moist blondie that are naturally gluten free and high in protein and dietary fiber. If you enjoy having a treat while adding in key nutrients (why waste a snack with empty ingredients that don't do anything to fuel your body?), then this recipe is for you. Not to mention it's as easy as throwing it all into a food processor, folding in some chocolate, and baking! So easy, you'll have a batch ready in no time. Bonus points if you bring them to the office or a party and don't tell anyone how you made them -- they're fail-proof crowd-pleasers and no one will know they're secretly eating a health food :)

Ingredients: 1 can garbanzo beans (chickpeas) 1/2 cup almond butter (or peanut butter to make them peanut butter chocolate chunk blondies) 1/4 cup maple syrup (or date syrup) 1 large egg 1 tsp vanilla extract 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp cinnamon 1/4 tsp sea salt 1/2 cup chocolate chunks

Instructions: Preheat oven to 350° fahrenheit. Lightly spray the bottom and sides of an 8x8 baking pan with oil (I prefer to use avocado oil), then wipe off excess oil so the ban is just barely greased.

Add all ingredients except for chocolate chunks into a food processor. Blend until a smooth batter forms.

Transfer batter to a mixing bowl. Add chocolate chunks and mix into batter.

Pour batter with chocolate chunks into the 8x8 baking pan and bake in the oven for 20-25 minutes, or until a toothpick or knife comes out clean.

Allow to cool before cutting and removing from pan to avoid crumbling. Cut into squares and serve.

To keep them longer, refrigerate once they are completely cooled.

Makes 16 small blondies.
