Curry Spice Popcorn

This curry spice popcorn is super easy to make for a quick weekend snack or to bring to party. It also makes a fantastic gift if you package it up nice and add a bow -- think Christmas, hostess gift, etc. Just the right amount of kick and flavor to make everyone happy!

Ingredients: 1 cup yellow popcorn kernels 2 TBSP coconut oil 2 TBSP melted butter or ghee (or another 2 TBSP coconut oil to make it vegan and dairy free) 2 tsp dried curry powder 1 tsp dried turmeric 1/2 tsp chili powder 1/4 tsp dried cayenne 1 tsp sea salt

Instructions: In a large soup pot, heat 2 TBSP coconut oil for about 2 minutes. Once the oil is hot, place three popcorn kernels in the pot and cover with a lid. Wait until all three kernels pop, then remove the lid and add the rest of the kernels in a single layer on the bottom of the pot, cover with a lid, and turn heat down to low.

The popcorn should begin to pop. Shake the pot occasionally to encourage movement in the pot, and to ensure all kernels pop. Once the popping slows down (meaning, more than a second or two between pops), remove from the pot from the heat.

Transfer the popcorn into a large mixing bowl or another big pot for tossing with oil/butter and spices. Mix in melted butter or ghee (or the other 2 TBSP of coconut oil if making vegan/dairy free), and the spices, and toss until all of the popcorn is thoroughly coated. Add any more of the spices or butter to taste.

Makes about 16 cups of popcorn.
