Olive Oil Herb Popcorn
This olive oil herb popcorn is super easy to make for a quick weekend snack or to bring to party. It also makes a fantastic gift if you package it up nicely and add a bow -- think Christmas, hostess gift, etc. The perfect savory treat to make everyone happy!
Ingredients: 1 cup yellow popcorn kernels 4 TBSP extra virgin olive oil (2 for cooking, 2 for mixing after it's popped) 2 tsp sea salt (plus more to taste) 2 TBSP dried herb blend (rosemary, thyme, basil, etc.)
In a large soup pot, heat 2 TBSP of the olive oil on high heat for about 2 minutes. Once the oil is hot, place three popcorn kernels in the pot and cover with a lid. Wait until all three kernels pop, then remove the lid and add the rest of the kernels in a single layer on the bottom of the pot, cover with a lid, and turn heat down to low.
The popcorn should begin to pop. Shake the pot occasionally to encourage movement in the pot, and to ensure all kernels pop. Once the popping slows down (meaning, more than a second or two between pops), remove from the pot from the heat.
Transfer the popcorn into a large mixing bowl or another big pot for mixing in the oil and spices. Toss the popcorn with the leftover 2 TBSP of olive oil, along with the spices, and sea salt. Add more of any of these ingredients to taste.
Makes about 16 cups of popped popcorn.
