Super-seed Monkey Porridge
This sweet and cinnamon-spiced "oatmeal"/porridge is a filling and satisfying treat to start your day, or to even have as a healthy nutrient-rich dessert! When I say cinnamon-spiced, I tend to be aggressive with cinnamon, so feel free to modify according to your taste preferences... but try the cinnamon challenge in this format if you're feeling adventurous! Cinnamon is not only delicious and smells divine, but it also has a ton of healing and health properties! For example, it helps fight inflammation and repair tissue damage -- both of which are great for athletes and active folks who are constantly moving and working those muscles in new and challenging ways. Cinnamon also helps to regulate blood sugar by reducing insulin resistance, which is important for maintaining a healthy metabolism and staving off diseases like diabetes. If these weren't reason enough, then maybe the flavorful combo of cinnamon with sweet bananas and dates in a soft pudding-like texture will be convincing enough.
Ingredients: 3 tsp quinoa 2 tsp buckwheat groats 1 tsp chia seeds 3/4 cup water 1 date, diced small 1/2 banana, diced small 1 tsp+ cinnamon 1/2 tsp pumpkin pie spice 1 TBSP almond butter
Instructions: In a small saucepan or microwave safe bowl, add quinoa, buckwheat groats, chia seeds, and water. If using the stove, heat the mixture on medium heat until quinoa just starts to sprout (about 7 minutes, stirring frequently). If using the microwave, microwave on 70% power for about 5-7 minutes, or until quinoa just starts to sprout, stirring every minute or so.
When quinoa is just barely sprouted, remove from heat, and add to a serving bowl (if different than the bowl you microwaved it in). Add in the banana and date pieces, along with the cinnamon, pumpkin pie spice, and almond butter, and mix thoroughly.
Makes 1 serving.
