Pistachio Cardamom Donuts (Gluten Free, Dairy Free)


As anyone who adheres to a gluten free diet can attest, there are certain things that you just really really miss. In all fairness, there are a TON more options out there for gluten-free folks than there ever have been before, which is so refreshing and I'm grateful for that. But there are some things that you just don't see gluten-free versions of as often as we might like. And when we do, they're likely not made with ingredients we feel great about.

But behold! Here is a recipe for donuts made with super clean, wholesome ingredients that are gluten and dairy-free! YES! The flavors of these pistachio cardamom are nutty and sweet and will give you all the feels.

Ingredients: For the donuts: 1 cup almond flour 2 TBSP tapioca flour 1 TBSP maca 2 scoops collagen peptides (optional -- leave out to make vegan) 1/4 tsp sea salt 1/4 tsp baking soda 2 tsp hemp seeds 2 eggs (ideally organic, pasture-raised) 2 TBSP honey or maple syrup 1 tsp almond extract 1/2 tsp dried ginger 1 tsp dried cardamom 2 TBSP coconut oil (melted then cooled slightly) 1 tsp apple cider vinegar

For frosting: 1 cup coconut cream (or 1 can full-fat coconut milk refrigerated for at least 2 hours to allow separation and collection of coconut cream from liquid) 2 TBSP honey or maple syrup 1 tsp almond extract 2 TBSP finely crushed pistachios 1 tsp dried cardamom

Instructions for Donuts: Preheat oven to 350° fahrenheit. Lightly grease and wipe down your donut pan.

Combine all dry ingredients in the bowl of a stand mixer (or a large bowl to use with a hand mixer). Then add all wet ingredients and mix on high for about 5 minutes.

Pour batter into donut pan, filling to just below the lip of each donut mold (they will rise, so you don't want to over-fill them).

Bake for 10-12 minutes, or until a they begin to get a little golden brown.

Allow to cool completely before removing from the donut pan to avoid them breaking.

Add frosting (recipe below), to each donut, and garnish with crushed pistachios.

Makes 6 donuts.

Instructions for Frosting: To collect the coconut cream from cans of coconut milk, scoop out the cream that has risen to the top after refrigeration, and save or throw out the remaining coconut milk/liquid that has settled to the bottom.

Add all ingredients to the bowl of a stand mixer (or in a large bowl to use with a hand mixer). Mix on high until the mixture forms soft peaks (about 1-2 minutes).

Make sure donuts are fully cooled before frosting them.
